The Quai Jean Miquel will host sea urchin tasting and sales points, as well as association stands such as La Route des Vignerons et des Pêcheurs. Tasting plates will be served with shellfish, tielles, mussels, cheese, pastries... Local restaurateurs will prepare sea urchins according to their own recipes, all paired with regional wines.
What are we eating when we eat a sea urchin?
This small marine animal belongs to the echinoderm family, which also includes starfish. Its name means "hedgehog skin" in Greek, hence its nickname "hedgehog" or "chestnut of the sea."
It is an invertebrate, meaning it has no skeleton—more precisely, no vertebral column. It has neither eyes nor a brain... but it does have five teeth! Its many spines help it break apart and move around. Sea urchins live in saltwater, under rocky areas or in vast sandy expanses.
